What is "White Coffee"? 

White coffee is only slightly roasted, not even to the point where it “cracks”, or expands. It does not taste like traditional coffee. It has a distinct, peanut butter aroma and taste. When brewed for drip, it is has a smooth taste, with subtle grassy notes, somewhat like green tea, but with little to no astringency. Brew at your usual brew temps for light roast coffee; around 200F. 

It has higher caffeine content than traditional coffee. It is commonly used in dirty chai and white chocolate lattes, to boost caffeine and add a nutty flavor. If you make a white chocolate latte with this, I think it tastes like a toasted marshmallow.

For grinding, go slightly finer for the grind size of the particular style you are making it than you would for a traditionally-roasted whole bean coffee. 

 

About the Bean: Mexico Fair Trade Chiapas Triunfo Verde Coooperative

The farms contributing to Triunfo Verde Co-op are located in the buffer zone
of El Triunfo Biosphere Reserve. The biosphere is located in the highlands of
the Sierra Madre de Chiapas. El Triunfo Biosphere Reserve is one of the
world’s most diverse forest reserves. This reserve contains Mesoamerica’s
largest continuous cloud forest, and it serves as a refuge to thousands of
plant and animal species. El Triunfo is a rare and valuable sanctuary that
requires continued protection. All the coffee they produce is shade-grown,
and biological corridors are created in order to facilitate bird and animal
migration.

The beans in the offering are grown anywhere from 900-1800 meters above sea-level.
